Egg-n-Potato Curry
Ingredients
4 eggs
4 potatoes
100 gm sambhar onions, peeled and sliced
1/2 cup freshly grated coconut
3 green chillies
1" piece ginger
4 flakes garlic
1/2 tsp gram masala powder
2 tsp vinegar
1 tsp salt
1/4 cup coconut oil
Garnishing
2 tsp chopped (mixed) nuts, fried
Method
1. Hard boil the egg, shell and slice lengthwise into two halves.
2. Grind the coconut oil, chillies, ginger and garlic to a fine paste.
3. Wash, peel and chop the potatoes.
4. Heat oil and saute the onions for a minute.
5. Add the ground paste and the chopped potatoes and saute for a minute.
6. Add garam masala powder, salt with cup of water and cook till the potatoes are tender.
7. Add the eggs and vinegar. Mix the contents well and cook 2-3 minutes. Remove it from the fire and transfer the contents to a serving dish.
8. Garnish it with the chopped and fried nuts.
9. Serve hot rice and pappadam. m
